I love a good convenient and easy meal and add a mexican flare to it, I am all over it! This meal right here is super simple all you need is a bag of yellow rice, black beans, corn, pico de gallo (or salsa), avocado if you are an avocado loving girl like me, some slices of grilled chicken and a big 'ol dollop of sour cream.
Voila!
It really is so delicious. I didn't think I could eat the entire bowl but let me just say, I surprised myself. All that was missing was a margarita on the rocks.
